  • 3 cups (360g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup (226g) unsalted butter, softened
  • 1 ½ cups (300g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • ½ teaspoon almond extract (optional)
  • About 2 cups conversation hearts candies

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat softened butter and granulated sugar with an electric mixer on medium speed until light and fluffy, about 3-4 minutes.
  4. Beat in eggs one at a time, then stir in vanilla extract and almond extract (if using) until smooth.
  5. Gradually add the flour mixture to the butter mixture, mixing on low speed until just combined. Avoid overmixing.
  6. Divide dough into two disks, wrap in plastic wrap, and refrigerate for at least 1 hour.
  7. On a lightly floured surface, roll one disk of dough to about ¼-inch (6mm) thickness. Keep the other disk chilled.
  8. Use heart-shaped cookie cutters to cut out cookies and place them about 2 inches apart on prepared baking sheets.
  9. Press 1 or 2 conversation heart candies gently into the center of each cookie.
  10. Bake for 10-12 minutes until edges start to turn golden but centers remain soft.
  11. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Make sure butter is softened, not melted. Chill dough for at least 1 hour to prevent spreading and maintain shape. If dough warms while rolling, refrigerate for 10-15 minutes. Avoid overmixing flour to keep cookies tender. Conversation hearts can be added halfway through baking if they melt too much. Store cookies in an airtight container at room temperature for up to 5 days or freeze for up to 3 months.
