  • 1 teaspoon vanilla extract
  • For the glaze:
  • 1 cup powdered sugar, sifted
  • 2 tablespoons eggnog
  • ½ teaspoon vanilla extract
  • A pinch of ground nutmeg for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. In a large bowl, beat softened butter with granulated sugar and brown sugar until light and fluffy, about 3-4 minutes.
  4. Beat in egg and vanilla extract until fully combined.
  5. Slowly mix in eggnog; dough will be soft.
  6. Gradually fold dry ingredients into wet ingredients using a rubber spatula until just combined.
  7. Scoop dough by heaping tablespoons onto prepared baking sheets, spacing about 2 inches apart.
  8. Bake for 10-12 minutes until edges are set and centers look slightly underbaked.
  9. Cool on baking sheet for 5 minutes, then transfer to cooling racks to cool completely.
  10. Prepare glaze by whisking powdered sugar, eggnog, and vanilla extract until smooth; adjust consistency as needed.
  11. Drizzle or spread glaze over cooled cookies and sprinkle with nutmeg if desired.
  12. Let glaze set for about 15 minutes before serving or storing.

Notes

If dough is too sticky, chill for 15 minutes before shaping. Use fresh spices for best flavor. Avoid overmixing after adding flour to keep cookies tender. Glaze consistency can be adjusted by adding more powdered sugar or eggnog. Cookies can be made dairy-free by substituting butter and eggnog with vegan alternatives.
