A simple and delicious side dish featuring tender roasted carrots glazed with honey and fresh thyme, perfect for any occasion.

  • 1 pound (450 g) carrots, peeled and cut into uniform sticks or rounds
  • 2 tablespoons honey (raw, local preferred)
  • 1 tablespoon olive oil (extra virgin preferred)
  • 2 teaspoons fresh thyme leaves, stripped from stems
  • ½ teaspoon salt
  • ¼ teaspoon freshly cracked black pepper
  • Optional: 1 teaspoon fresh lemon juice
  • Optional: pinch of red pepper flakes

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel the carrots and slice them into about ½-inch (1.25 cm) thick sticks or rounds. For thicker carrots, slice lengthwise for even cooking.
  3. In a large bowl, whisk together honey, olive oil, fresh thyme leaves, salt, and black pepper. Add lemon juice if using.
  4. Add the prepared carrots to the bowl and toss until each piece is well coated with the honey-thyme mixture.
  5. Spread the carrots out in a single layer on a parchment-lined baking sheet. Avoid overcrowding.
  6. Roast in the oven for 20-25 minutes, turning the carrots halfway through, until tender and caramelized.
  7. Once out of the oven, sprinkle extra fresh thyme or cracked pepper if desired. Serve warm.

Notes

Warm thick or crystallized honey slightly before mixing to help it coat the carrots better. Toss carrots halfway through roasting for even caramelization. Watch closely near the end to prevent honey from burning. Fresh thyme is preferred; if using dried thyme, use 1 teaspoon instead of 2 teaspoons fresh.
