  • 6 tablespoons unsalted butter, cold and cubed
  • 1/3 cup whole milk (or dairy-free milk like oat milk)
  • 1 large egg, beaten
  • Creamy vanilla ice cream (store-bought or homemade)

Instructions

  1. Peel, pit, and slice about 5 cups of fresh peaches. If using frozen peaches, thaw and drain well.
  2. Toss peaches in a large bowl with 1/3 cup granulated sugar, 1/4 cup brown sugar, 1 tablespoon fresh lemon juice, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg (if using), and 2 teaspoons cornstarch. Stir gently to coat evenly. Set aside.
  3. In a medium bowl, whisk together 1 cup all-purpose flour, 1/4 cup granulated sugar, 1 1/2 teaspoons baking powder, and 1/4 teaspoon salt.
  4. Add 6 tablespoons cold, cubed unsalted butter to the flour mixture. Use a pastry cutter or forks to cut butter into flour until coarse crumbs form.
  5. In a small bowl, whisk 1/3 cup whole milk and 1 beaten large egg. Pour into flour-butter mixture and stir gently until just combined; batter will be slightly sticky.
  6. Preheat oven to 375°F (190°C). Pour peach filling into a greased 9×9-inch baking dish, spreading evenly.
  7. Drop spoonfuls of cobbler topping over peaches, leaving gaps for filling to bubble through.
  8. Bake for 35 to 40 minutes until topping is golden brown and filling is bubbling. Tent with foil if topping browns too quickly after 25 minutes.
  9. Let cobbler cool for about 5 minutes before serving.
  10. Serve warm topped with a generous scoop of creamy vanilla ice cream.

Notes

Keep butter cold for a flaky topping. Don’t overmix the batter to avoid toughness. Add extra cornstarch if peaches are very juicy. Let cobbler cool slightly before serving for best texture. For gluten-free, substitute flour with almond or oat flour. For dairy-free, use coconut oil instead of butter and dairy-free milk and ice cream.
