  • 3/4 cup (75 g) breadcrumbs (plain, seasoned, or Panko)
  • 1 large egg (room temperature)
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup (60 ml) milk (whole or 2%)
  • 1/3 cup (80 ml) ketchup (plus extra for glaze)
  • 2 tbsp (25 g) brown sugar
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried Italian herbs (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a small bowl, mix together 1/3 cup (80 ml) ketchup, 2 tbsp (25 g) brown sugar, and 1 tsp Dijon mustard until smooth. Set aside.
  3. Finely dice 1/2 cup onion and mince 2 garlic cloves.
  4. In a large bowl, whisk 1 large egg with 1/4 cup (60 ml) milk and 1 tsp Worcestershire sauce.
  5. Add 1 lb (450 g) ground turkey, 3/4 cup (75 g) breadcrumbs, chopped onion, garlic, 1 tsp salt, 1/2 tsp black pepper, and 1 tsp dried Italian herbs to the wet mix. Gently fold everything together with a spatula without overmixing.
  6. Transfer the mixture to a loaf pan or baking sheet and shape into a loaf about 8 inches long and 4 inches wide. Pat the top smooth.
  7. Brush the sweet ketchup glaze generously over the top of the meatloaf.
  8. Bake for 50-60 minutes. At about 40 minutes, brush on a second layer of glaze if desired.
  9. Check for doneness; internal temperature should reach 165°F (74°C) or juices run clear.
  10. Let the meatloaf rest for 10 minutes before slicing.

Do not overmix the meat to keep it tender. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C). Brush glaze twice for a glossy finish. Rest meatloaf before slicing to prevent crumbling. Tent with foil if glaze browns too quickly.
