  • 4 large eggs, room temperature
  • 2 tablespoons whole milk or heavy cream
  • Salt and freshly cracked black pepper, to taste
  • 1/2 cup shredded cheddar or Monterey Jack cheese
  • 4 large flour tortillas

Instructions

  1. Place 6 slices of thick-cut bacon in a cold skillet. Turn heat to medium and cook for 6-8 minutes, flipping occasionally, until crispy but not burnt. Transfer bacon to a plate lined with paper towels to drain excess grease. Save 1 tablespoon of bacon fat in the skillet for cooking eggs.
  2. In a medium bowl, whisk together 4 large eggs and 2 tablespoons whole milk or cream until fully combined. Season with salt and freshly cracked black pepper.
  3. Heat the reserved tablespoon of bacon fat in the skillet over medium-low heat. Pour in the egg mixture. Let sit undisturbed for 15 seconds, then gently stir with a silicone spatula, folding eggs from edges to center. Cook until mostly set but slightly runny, about 3-4 minutes. Remove from heat to finish cooking off heat.
  4. While eggs cook, warm 4 large flour tortillas in a dry skillet for 20-30 seconds per side until soft and pliable. Keep warm wrapped in a clean kitchen towel.
  5. Lay a warm tortilla flat. Sprinkle 2 tablespoons shredded cheese down the center. Add a quarter of the scrambled eggs and 1-2 slices of crispy bacon. Add optional extras like avocado slices or salsa if desired.
  6. Fold in the sides of the tortilla, then roll tightly from the bottom up to form a burrito. Repeat with remaining tortillas.
  7. Serve immediately warm, with extra salsa or hot sauce on the side if preferred.

Notes

Cook eggs on medium-low heat and remove just before fully set to keep them fluffy and creamy. Save 1 tablespoon of bacon fat to cook eggs for added flavor. Warm tortillas until soft and pliable to avoid cracking. Burritos are best enjoyed fresh but can be reheated in a skillet or microwave. For a crispy outside, toast burrito seam side down in skillet for 1-2 minutes.
