A quick and easy twist on classic deviled eggs using creamy avocado filling topped with crunchy everything bagel seasoning for a flavorful snack or appetizer.

  • 6 large eggs, hard-boiled and peeled
  • 1 medium ripe avocado, mashed
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons mayonnaise (optional, can substitute with plain Greek yogurt or dairy-free yogurt)
  • 1 teaspoon Dijon mustard
  • Salt and freshly ground black pepper, to taste
  • 2 teaspoons everything bagel seasoning
  • Chives or fresh herbs, finely chopped (optional, for garnish)

Instructions

  1. Place 6 large eggs in a single layer in a medium saucepan. Cover with cold water about an inch above the eggs. Bring to a boil over medium-high heat. Once boiling, cover, remove from heat, and let sit for 10-12 minutes.
  2. Transfer the eggs to an ice bath and cool completely for about 5 minutes to stop cooking and make peeling easier.
  3. Gently tap each egg on the counter to crack the shell. Peel carefully under running water if needed, then slice each egg lengthwise in half. Pop out the yolks and place them in a mixing bowl.
  4. Add mashed avocado, fresh lemon juice, mayonnaise (or yogurt), and Dijon mustard to the yolks. Mash everything together with a fork or potato masher until smooth and creamy. Season with salt and pepper to taste.
  5. Spoon or pipe the avocado mixture back into the egg white halves. Do not overfill but make it generous.
  6. Sprinkle about 2 teaspoons of everything bagel seasoning evenly over the filled eggs.
  7. Garnish with finely chopped chives or fresh herbs if desired. Serve immediately or chill for 15-20 minutes to let flavors meld.

Notes

Use ripe but firm avocados for best texture. If filling is too loose, add more mashed yolk or cream cheese; if too thick, add a splash of milk or lemon juice. Keep everything bagel seasoning separate if making ahead to maintain crunch. Older eggs peel easier. Piping the filling creates a professional look and helps portion control.
