  • 1 cup granulated sugar
  • 3 large eggs, room temperature
  • 1 cup coconut cream
  • 1 teaspoon vanilla extract
  • 2 tablespoons all-purpose flour
  • ½ teaspoon coconut extract (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Spread shredded coconut on a baking sheet and toast for 5-7 minutes, stirring halfway, until golden and fragrant. Let cool slightly.
  2. In a medium bowl, combine toasted coconut, graham cracker crumbs, melted butter, sugar, and salt. Stir until mixture holds together when pressed.
  3. Press crust mixture firmly and evenly into the bottom of a 9-inch springform pan. Chill in the refrigerator while preparing the filling.
  4. In a large bowl, beat cream cheese and sugar until smooth and creamy, about 3-4 minutes. Add eggs one at a time, mixing gently after each.
  5. Stir in coconut cream, vanilla extract, flour, and coconut extract (if using). Mix until just combined.
  6. Pour filling over chilled crust and smooth the top with a spatula.
  7. Bake at 325°F (160°C) for 50-60 minutes until edges are set but center jiggles slightly.
  8. Turn off oven and leave cheesecake inside with door slightly open for 1 hour to cool gradually.
  9. Remove from oven, cool to room temperature, then refrigerate for at least 4 hours or overnight to set.
  10. Run a thin knife around edges before removing springform pan. Slice with a warm, wet knife and serve.
