These creamy deviled eggs with crispy bacon and fresh chives offer a perfect balance of smoky, tangy, and creamy flavors, making them an irresistible appetizer for any occasion.

Ingredients

Scale
  • 6 large eggs (preferably organic or free-range)
  • 45 strips thick-cut bacon
  • 3 tablespoons mayonnaise (or Greek yogurt for a tangier twist)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • Salt to taste
  • Freshly cracked black pepper to taste
  • 2 tablespoons fresh chives, finely chopped
  • Smoked paprika (optional, for garnish)

Instructions

  1. Place 6 large eggs in a medium pot and cover with cold water by about an inch. Bring to a rolling boil over medium-high heat (about 10 minutes). Once boiling, cover the pot, remove from heat, and let stand for 12 minutes.
  2. Transfer the eggs immediately to a bowl of ice water to cool for at least 5 minutes. Gently tap and peel the eggs, keeping them whole.
  3. While eggs cool, cook 4-5 strips of thick-cut bacon in a skillet over medium heat until crispy (about 6-8 minutes). Transfer to paper towels to drain excess fat, then crumble into small pieces.
  4. Carefully slice each egg in half lengthwise. Remove yolks and place them in a mixing bowl. Arrange the whites on a serving platter.
  5. Mash the yolks with a fork until crumbly. Add 3 tablespoons mayonnaise, 1 teaspoon Dijon mustard, 1 teaspoon apple cider vinegar, salt, and pepper to taste. Mix until smooth and creamy. Adjust seasoning if needed. Stir in half of the chopped fresh chives.
  6. Using a spoon or piping bag, fill each egg white half generously with the yolk mixture.
  7. Sprinkle crumbled crispy bacon and remaining fresh chives on top. Add a pinch of smoked paprika for color and smoky warmth if desired. Serve chilled or at room temperature.

Notes

If the filling is too thick, add a splash of milk or more mayonnaise for creaminess. Peeling eggs under running water helps remove shells easily. Cook bacon slowly over medium heat for even crispness. Use a piping bag with a star tip for a prettier presentation or a spoon for a rustic look. Store leftovers in an airtight container in the fridge for up to 2 days; avoid freezing.
