Ingredients

Scale
  • 2 cups (250g) all-purpose flour
  • 1/2 cup (100g) granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 2 large eggs (room temperature)
  • 1 cup (240ml) creamy eggnog
  • 1/4 cup (60g) unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (180g) powdered sugar, sifted (for glaze)
  • 23 tablespoons creamy eggnog (for glaze)
  • 1/2 teaspoon ground nutmeg (for glaze)
  • 1/4 teaspoon ground cinnamon (optional, for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your donut pan lightly with butter or non-stick spray.
  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, nutmeg, and cinnamon until evenly combined.
  3. In a medium bowl, beat the eggs lightly, then whisk in the eggnog, melted butter, and vanilla extract until smooth and creamy.
  4. Pour the wet mixture into the dry ingredients and fold gently with a rubber spatula until just combined. Do not overmix.
  5. Spoon the batter into each donut pan cavity about 3/4 full.
  6. Bake for 15-18 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool the donuts on a rack for 10 minutes.
  8. In a small bowl, whisk together powdered sugar, eggnog, nutmeg, cinnamon, and vanilla extract until smooth. Adjust consistency as needed.
  9. Dip the top of each donut into the glaze or spoon it over. Place glazed donuts back on the rack and let glaze set for about 20 minutes.

Notes

If batter is too thick, add a splash more eggnog; if too runny, add a tablespoon of flour. Cool donuts before glazing to prevent glaze from melting off. Use room temperature eggs for better mixing. Avoid overmixing batter to keep donuts tender.
