  • ½ cup chopped sun-dried tomatoes (preferably packed in oil)
  • 1 cup low sodium chicken broth (240 ml)
  • 1 cup heavy cream (240 ml)
  • ½ cup freshly grated Parmesan cheese
  • A handful fresh basil, chopped (or 1 teaspoon dried basil)
  • Pinch of red pepper flakes (optional)

Instructions

  1. Pat the chicken breasts dry with paper towels, then season both sides generously with salt and pepper. (5 minutes)
  2. Warm the olive oil and butter together in a large skillet over medium-high heat. (2 minutes)
  3. Add the chicken breasts to the hot pan without crowding. Cook for about 5-6 minutes on the first side until golden and crispy. Flip and cook another 5 minutes on the other side. The chicken will be slightly undercooked but will finish cooking in the sauce. (12 minutes total)
  4. Transfer the chicken to a plate and tent loosely with foil to keep warm. (1 minute)
  5. Lower heat to medium, add minced garlic and sun-dried tomatoes to the pan. Stir frequently for about 1-2 minutes until fragrant but not browned. (2 minutes)
  6. Pour in the chicken broth, scraping up any browned bits stuck to the pan. Let it simmer and reduce by half, about 4-5 minutes. (5 minutes)
  7. Reduce heat to low, stir in heavy cream and grated Parmesan cheese. Whisk gently until the cheese melts and the sauce thickens slightly. (3-4 minutes)
  8. Stir in fresh basil and optional red pepper flakes. Return chicken to the pan, spoon some sauce over each piece, and simmer gently for another 5 minutes until the chicken is cooked through and the sauce coats everything beautifully. (5 minutes)
  9. Serve the chicken with a generous ladle of sauce on top, optionally garnished with extra basil or Parmesan.
