A quick and easy homemade fudge combining roasted pistachios, semi-sweet chocolate, and sweetened condensed milk for a creamy, luxurious treat perfect for holidays and gifting.

  • 1/2 cup (115g) unsalted butter, softened
  • 2 cups (340g) semi-sweet chocolate chips
  • 1 can (14 oz / 396g) sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup (120g) roasted pistachios, shelled and finely chopped
  • 1 cup (125g) powdered sugar (optional)
  • 1/2 cup white chocolate chips (optional)

Instructions

  1. Line a 9×9-inch baking pan with parchment paper, leaving some overhang for easy removal. Set aside.
  2. Finely chop 1 cup roasted pistachios using a food processor or sharp knife. Set aside.
  3. In a medium saucepan over low heat, combine 1/2 cup softened unsalted butter, 2 cups semi-sweet chocolate chips, and 1 can sweetened condensed milk. Stir constantly with a wooden spoon or silicone spatula until melted and smooth, about 7-10 minutes.
  4. Remove saucepan from heat. Stir in 1 teaspoon vanilla extract and 1/4 teaspoon salt.
  5. Fold in the finely chopped pistachios and, if using, 1/2 cup white chocolate chips and 1 cup powdered sugar. Mix gently until evenly combined.
  6. Pour the fudge mixture into the prepared pan and smooth the top with a spatula. Tap the pan gently on the counter to release air bubbles.
  7. Chill in the refrigerator for at least 3 hours or until firm.
  8. Lift the fudge out using the parchment paper overhang and cut into small squares with a sharp knife. For cleaner cuts, warm the knife blade under hot water and dry before slicing.

Notes

Melt chocolate and butter on low heat and stir constantly to avoid burning or seizing. Use fresh roasted pistachios for best flavor and texture. Chill fudge for at least 3 hours before cutting for clean slices. Powdered sugar is optional for firmer texture. For vegan version, use dairy-free butter, coconut condensed milk, and dairy-free chocolate. Avoid microwaving fudge for reheating; warm knife blade for clean cuts.
