  • 1 tablespoon fresh lemon juice
  • Salt to taste
  • Freshly ground black pepper to taste
  • A pinch of garlic powder (optional)
  • 4 thick slices of artisan bread (sourdough or rustic whole grain recommended)
  • Extra virgin olive oil (for brushing)
  • 1 cup fresh strawberries, sliced
  • 1/3 cup feta cheese, crumbled
  • A handful of fresh basil leaves, torn
  • 1 teaspoon honey (optional)

Instructions

  1. Scoop the flesh from 2 ripe avocados into a mixing bowl. Add 1 tablespoon of fresh lemon juice, a pinch of garlic powder (optional), salt, and freshly ground black pepper to taste. Mash everything together with a fork until creamy but still slightly chunky, about 3-5 minutes.
  2. Brush both sides of 4 thick slices of artisan bread lightly with extra virgin olive oil. Toast in a toaster or grill pan over medium heat until golden brown and crisp, about 3-4 minutes per side.
  3. While the bread is toasting, wash and hull 1 cup of fresh strawberries. Slice them evenly to about 1/4-inch thickness, about 5 minutes.
  4. Spread a generous layer of the creamy avocado mixture over each toasted bread slice. Top with sliced strawberries, then sprinkle 1/3 cup of crumbled feta evenly on top. Tear a handful of fresh basil leaves and scatter over each toast.
  5. If desired, drizzle about 1 teaspoon of honey over each toast. Serve immediately for best texture and flavor.

Notes

If avocado is underripe, place it in a paper bag with an apple for 1-2 days to speed ripening. Do not over-mash avocado to keep some texture. Toast bread well to avoid sogginess. Assemble toast just before serving for best freshness. Substitute almond flour bread for gluten-free option. Vegan version can omit feta or use plant-based cheese and replace honey with agave syrup.
