  • 1/2 cup (60 g) fresh raspberries (optional)
  • 1 tbsp (14 g) unsalted butter, softened
  • 1 tsp vanilla extract

Instructions

  1. Line a 9×13 inch baking sheet with parchment paper or a silicone baking mat.
  2. Place white chocolate chips and softened butter in a microwave-safe bowl. Microwave on medium power for 20 seconds, stir, then repeat in 15-20 second bursts until smooth and creamy (about 1 to 1.5 minutes total). Alternatively, melt over a double boiler, stirring gently until silky smooth.
  3. Stir in vanilla extract into the melted chocolate.
  4. Gently fold freeze-dried raspberries into the melted chocolate.
  5. Pour the chocolate mixture onto the prepared baking sheet and spread evenly to about 1/4 inch (6 mm) thickness.
  6. If using fresh raspberries, scatter them on top and gently press into the chocolate.
  7. Refrigerate for at least 1 hour until the chocolate is firm and set.
  8. Break the bark into irregular pieces using a sharp knife or hands. Store in an airtight container in a cool place or refrigerator.
