These crispy baked buffalo wings deliver a perfect balance of spicy heat and creamy blue cheese dip, making them a crowd-pleasing comfort food that’s healthier and easier than deep frying.

Ingredients

Scale
  • 2 pounds chicken wings, split into flats and drumettes (fresh or thawed)
  • 1 tablespoon baking powder (not baking soda)
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ½ cup buffalo sauce (e.g., Frank’s RedHot)
  • 3 tablespoons unsalted butter, melted
  • ½ teaspoon garlic powder
  • Blue cheese dip:
  • ½ cup crumbled blue cheese (about 75 grams)
  • ½ cup sour cream (120 grams)
  • ¼ cup mayonnaise (60 grams)
  • 1 teaspoon fresh lemon juice
  • ¼ teaspoon garlic powder
  • Salt and pepper to taste
  • Chives or parsley, finely chopped (optional garnish)

Instructions

  1. Pat the chicken wings dry with paper towels to ensure crispy skin.
  2. In a large bowl, toss wings with baking powder, salt, and black pepper until evenly coated.
  3. Place a wire rack on a rimmed baking sheet and arrange the wings in a single layer, leaving space between each piece.
  4. Bake in a preheated oven at 425°F (220°C) for 40 minutes, flipping the wings after 20 minutes for even browning.
  5. While wings bake, melt butter in a small saucepan over low heat. Stir in buffalo sauce and garlic powder, keeping warm.
  6. Remove wings from oven and toss them in the warm buffalo sauce until well coated.
  7. In a bowl, combine crumbled blue cheese, sour cream, mayonnaise, lemon juice, garlic powder, salt, and pepper. Stir gently to keep chunks intact and chill until serving.
  8. Serve wings immediately with blue cheese dip and optional celery sticks.

Notes

Pat wings dry thoroughly to ensure crispiness. Use baking powder, not baking soda, to avoid metallic taste. Flip wings halfway through baking for even crisping. Toss wings gently in sauce to keep skin crispy. Blue cheese dip tastes better after chilling. For extra crispiness, broil wings 1-2 minutes at the end, watching closely.
