A quick and easy side dish featuring crispy, caramelized Brussels sprouts infused with rich garlic butter and smoky bacon. Perfect for weeknight dinners or holiday tables.

  • 1 pound Brussels sprouts, trimmed and halved
  • 4 slices thick-cut bacon
  • 3 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • ¾ teaspoon salt
  • ½ teaspoon freshly cracked black pepper
  • Optional: pinch of red pepper flakes
  • Optional: squeeze of lemon juice before serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Trim off the tough ends of the Brussels sprouts and halve each sprout lengthwise. Quarter larger sprouts for even cooking.
  3. Lay the bacon strips on a baking sheet and roast in the oven for about 10 minutes until crispy. Remove and set aside on paper towels to drain. Leave the bacon fat on the pan.
  4. In a small bowl, combine melted butter, minced garlic, olive oil, salt, and black pepper. Stir well.
  5. In a large mixing bowl, add the halved Brussels sprouts and pour the garlic butter mixture over them. Toss well to coat evenly. Add red pepper flakes if desired.
  6. Spread the coated Brussels sprouts cut side down on the baking sheet with the bacon fat.
  7. Roast for 20-25 minutes, flipping the sprouts halfway through (about 12 minutes) for even browning. They should be golden and crispy on the edges but tender inside.
  8. Chop or crumble the roasted bacon and sprinkle it over the sprouts in the last 5 minutes of cooking.
  9. Remove from oven and, if desired, squeeze fresh lemon juice over the top.
  10. Serve immediately while hot and crispy.

Notes

If sprouts aren’t crisping as expected, broil for 1-2 minutes at the end, watching carefully to avoid burning. Avoid overcrowding the pan to ensure crispiness. Leftovers reheat best in a skillet or oven at 375°F for 5-7 minutes to maintain crispiness. For dairy-free, substitute butter with olive oil or vegan butter alternative.
