  • 1 tablespoon olive oil

Instructions

  1. Rinse 1 pound of fresh green beans thoroughly. Trim off the stem ends and pat dry with a clean kitchen towel.
  2. Heat a large skillet over medium heat and add 1 tablespoon olive oil. Add 1/3 cup sliced almonds and stir frequently for 3-4 minutes until golden brown and fragrant. Remove almonds from the pan and set aside.
  3. In the same skillet, melt 2 tablespoons unsalted butter over medium heat. Add minced garlic and sauté for 30 seconds until fragrant but not browned.
  4. Add the green beans to the skillet, tossing to coat in butter and garlic. Cook for 7-9 minutes, stirring occasionally, until green beans are crisp-tender and slightly blistered.
  5. Remove skillet from heat. Stir in 1 tablespoon fresh lemon juice, 1 teaspoon lemon zest (if using), toasted almonds, and the remaining 1 tablespoon butter. Season with sea salt and freshly ground black pepper to taste.
  6. Transfer to a serving dish and serve immediately.

For extra crispness, blanch green beans in boiling salted water for 2-3 minutes before sautéing and dry thoroughly. Toast almonds carefully over medium heat to avoid burning. Use vegan butter or extra olive oil for a dairy-free version. Avoid overcrowding the pan to allow beans to brown slightly.
