Crispy Herb Butter Salmon with Roasted Lemon

A quick and easy recipe featuring pan-seared salmon with crispy skin, herb-infused butter, and tangy roasted lemon for a flavorful and comforting dinner.

  • 4 skin-on salmon fillets (6 oz / 170 g each), preferably wild-caught
  • 4 tablespoons unsalted butter, softened
  • 2 tablespoons finely chopped fresh parsley
  • 2 tablespoons finely chopped fresh dill
  • 2 tablespoons finely chopped fresh thyme
  • 2 cloves garlic, minced
  • 1 large lemon, halved for roasting
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • Optional: pinch of smoked paprika or chili flakes

Instructions

  1. Preheat oven to 400°F (200°C). Place lemon halves cut side up on a baking sheet, drizzle with 1 tablespoon olive oil, and roast for about 20 minutes until caramelized and slightly softened.
  2. While lemons roast, combine softened butter, parsley, dill, thyme, minced garlic, salt, and pepper in a small bowl. Mix well and set aside.
  3. Pat salmon fillets dry with paper towels. Season both sides generously with salt and pepper.
  4. Heat 1 tablespoon olive oil in a skillet over medium-high heat until shimmering but not smoking.
  5. Place salmon fillets skin side down in the hot pan. Press gently with a spatula for 10 seconds to prevent curling.
  6. Cook skin side down for 4 to 5 minutes without moving until skin is deep golden brown and crispy.
  7. Flip fillets carefully and reduce heat to medium. Add dollops of herb butter around the fish and spoon melted butter over fillets as they cook for 2 to 3 minutes until desired doneness.
  8. Remove salmon from pan and let rest for a couple of minutes. Serve with roasted lemon halves for squeezing over the top.

Notes

Pat salmon dry thoroughly to ensure crispy skin. Do not overcrowd the pan. Press fillets gently after placing skin side down to prevent curling. Baste with herb butter after flipping to keep salmon moist. Rest fish before serving. For dairy-free version, substitute butter with coconut oil or plant-based margarine. Use fresh herbs for best flavor; dried herbs can be used in half quantity if needed.
