  • 6 bone-in, skin-on chicken thighs (about 2 pounds or 900 grams)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil or vegetable oil
  • 45 cloves garlic, minced
  • 1/4 cup honey (85 grams)
  • 3 tablespoons soy sauce (low-sodium preferred)
  • 2 tablespoons apple cider vinegar or rice vinegar
  • 1/4 cup water or chicken broth (60 ml)
  • Pinch of red pepper flakes (optional)
  • Chopped green onions or fresh parsley for garnish

Instructions

  1. Pat the chicken thighs dry with paper towels to remove moisture. Season both sides generously with salt and pepper.
  2. Heat a large skillet over medium-high heat and add 2 tablespoons of oil. Heat until shimmering but not smoking.
  3. Add chicken thighs skin-side down. Press gently to ensure even contact. Cook without moving for 7-9 minutes until skin is golden and crispy.
  4. Flip the thighs and reduce heat to medium. Cook for another 6-8 minutes until internal temperature reaches 165°F (74°C). Remove chicken and tent with foil to rest.
  5. Reduce heat to medium-low. In the same pan, sauté minced garlic for about 30 seconds until fragrant.
  6. Add honey, soy sauce, vinegar, and water or broth. Stir and simmer for 3-5 minutes until sauce thickens and becomes sticky.
  7. Return chicken thighs to the pan and spoon glaze over them. Cook for 2 more minutes, turning occasionally to coat evenly.
  8. Garnish with chopped green onions or parsley and serve immediately.

Notes

Pat chicken dry for crispy skin. Do not overcrowd pan. Use medium-high heat for searing. Let chicken rest after cooking. Simmer glaze gently to avoid burning. Reheat leftovers in skillet to maintain crispiness.
