A comforting and easy casserole featuring a creamy chicken and ranch base topped with crispy golden tater tots, perfect for quick weeknight dinners or potlucks.

Ingredients

Scale
  • 3 cups cooked, shredded chicken (rotisserie chicken recommended)
  • 1 cup ranch dressing (Hidden Valley Original recommended)
  • 1 can (10.5 oz) condensed cream of chicken soup
  • ½ cup sour cream (or Greek yogurt as a substitute)
  • 1½ cups shredded cheddar cheese (sharp or mild)
  • 1 (32 oz) bag frozen tater tots
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: ½ cup frozen peas or corn

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine cooked shredded chicken, ranch dressing, condensed cream of chicken soup, sour cream, onion powder, garlic powder, salt, and pepper. Stir until smooth and well mixed. Fold in peas or corn if using.
  3. Pour the creamy chicken mixture into a greased 9×13 inch baking dish and spread evenly.
  4. Sprinkle 1 cup of shredded cheddar cheese over the mixture.
  5. Arrange frozen tater tots in a single layer over the cheese-topped chicken mixture, spacing them to help crisp individually.
  6. Bake for 30-35 minutes until tater tots are golden brown and casserole is bubbling around the edges.
  7. During the last 5 minutes of baking, sprinkle the remaining ½ cup cheddar cheese on top of the tater tots and return to oven until melted and bubbly.
  8. Let the casserole rest for 5-10 minutes before serving to set and cool slightly.

Notes

Do not thaw tater tots before baking to maintain crispiness. Layer cheese between creamy base and tots to prevent sogginess. Rest casserole before serving for cleaner slices. Broil for 2-3 minutes at the end if tots need extra crisping. Prep creamy base ahead and refrigerate for convenience.
