A quick and satisfying crispy turkey sandwich featuring pan-fried turkey breast, fresh veggies, and melted provolone cheese on toasted sturdy bread. Perfect for busy weeknights, picnics, or casual meals.

  • 68 oz thinly sliced turkey breast (deli-style or leftover roasted turkey)
  • 2 slices sturdy sandwich bread (sourdough, ciabatta, or whole wheat)
  • 2 slices provolone cheese
  • A few leaves leafy lettuce, washed and dried
  • 23 slices ripe tomato
  • 1/4 cup thinly sliced cucumber (about 30 g)
  • A few rings thinly sliced red onion (optional)
  • 12 tablespoons mayonnaise or aioli
  • 1 teaspoon Dijon mustard
  • 1 tablespoon butter or olive oil
  • Salt and freshly ground black pepper to taste
  • Optional extras: avocado slices, pickles, hot sauce

Instructions

  1. Prep the veggies: rinse lettuce leaves and pat dry. Slice tomato, cucumber, and red onion thinly. Set aside.
  2. Mix the spread: combine mayonnaise and Dijon mustard in a small bowl and stir until smooth.
  3. Prepare the turkey: heat butter or olive oil in a non-stick skillet over medium heat. Season turkey slices with salt and pepper. Cook turkey for about 2 minutes per side until golden and crispy but juicy inside. Remove and set aside.
  4. Toast the bread: in the same pan, add more butter if needed and toast bread slices for 1-2 minutes per side until golden and slightly crisp.
  5. Assemble the sandwich: spread mayo-mustard mix evenly on one side of each bread slice. Layer crispy turkey on one slice, add provolone cheese on top, then fresh veggies (lettuce, tomato, cucumber, and optional onion). Top with the other bread slice, spread side down.
  6. Melt the cheese and final crisp: place the assembled sandwich back in the skillet over low to medium heat. Cover with a lid or press gently with a spatula. Cook for 2-3 minutes until cheese melts and bread is warmed through.
  7. Serve immediately: remove from heat, cut sandwich in half if desired, and enjoy warm.

Notes

For extra crispy crust, brush outside of bread lightly with melted butter before toasting. Use thin turkey slices for best crispiness. Cover pan when melting cheese to ensure even melting. Cook turkey in batches if making multiple sandwiches and keep warm covered with foil.
