A quick and easy recipe for crispy nachos loaded with seasoned ground beef, black beans, melty cheeses, and fresh toppings, perfect for parties and game nights.

  • Tortilla chips (thick, sturdy, e.g., Mission brand)
  • 1 lb (450g) ground beef (or ground turkey/plant-based meat)
  • 1 cup (240 ml) black beans, drained and rinsed
  • 2 cups (200g) shredded sharp cheddar cheese
  • 1 cup (100g) shredded Monterey Jack cheese
  • 2 medium jalapeños, sliced (fresh or pickled)
  • 1 small red onion, finely chopped
  • 2 medium tomatoes, diced
  • 1 ripe avocado, diced
  • 1/2 cup (120 ml) sour cream (or Greek yogurt)
  • 1/4 cup fresh cilantro, chopped
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and black pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Heat 1 tablespoon olive oil in a skillet over medium heat. Add 1 pound (450g) ground beef and brown for 5-7 minutes, breaking it apart as it cooks. Drain excess fat if needed.
  3. Stir in 1 tablespoon chili powder, 1 teaspoon cumin, 1 teaspoon garlic powder, 1/2 teaspoon smoked paprika, salt, and black pepper to taste. Cook for another 2 minutes until fragrant.
  4. Add 1 cup (240 ml) drained and rinsed black beans to the beef mixture. Stir and cook for 1-2 minutes to warm through. Set aside.
  5. While the beef cooks, dice 2 tomatoes and 1 ripe avocado, slice 2 jalapeños, finely chop 1 small red onion, and chop 1/4 cup fresh cilantro. Shred cheeses if not pre-shredded.
  6. Spread a generous layer of tortilla chips on a rimmed baking sheet. Evenly sprinkle half of the beef-bean mixture over the chips, then scatter half of the shredded cheddar and Monterey Jack cheeses.
  7. Add another layer of chips, then top with the remaining beef mixture and cheeses.
  8. Bake for 10-12 minutes until the cheese is fully melted and bubbly, and chips are golden around the edges.
  9. Once out of the oven, top with diced tomatoes, avocado, sliced jalapeños, red onion, and a dollop of sour cream or Greek yogurt.
  10. Sprinkle freshly chopped cilantro for garnish and serve immediately.

Notes

Use thick, sturdy tortilla chips to prevent sogginess. Layer toppings in two parts to keep chips crispy. Add fresh toppings like avocado, sour cream, and cilantro after baking. Avoid overbaking to prevent drying out chips. For dairy-free, use vegan cheese and coconut yogurt instead of sour cream.
