  • ½ cup sour cream
  • ½ cup Baileys Irish Cream
  • 1 teaspoon pure vanilla extract
  • ½ cup powdered sugar, sifted
  • 2 tablespoons whiskey
  • 1 tablespoon heavy cream

Instructions

  1. Preheat oven to 325°F (163°C). In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Stir until mixture resembles wet sand. Press firmly into bottom of 9-inch springform pan. Bake for 10 minutes, then remove and let cool.
  2. In a large mixing bowl, beat softened cream cheese with granulated sugar on medium speed until creamy and smooth, about 3-4 minutes, scraping down sides as needed.
  3. Beat in eggs one at a time, mixing well after each addition but avoiding overmixing.
  4. Fold in sour cream, Baileys Irish Cream, and vanilla extract gently with a rubber spatula until smooth and glossy.
  5. Pour filling over cooled crust in springform pan. Tap pan gently to release air bubbles. Bake at 325°F (163°C) for 50-60 minutes, until edges are set but center jiggles slightly.
  6. Turn off oven and leave cheesecake inside with door slightly open for 1 hour. Remove and cool to room temperature, then refrigerate at least 4 hours or overnight.
  7. Prepare whiskey glaze by whisking powdered sugar, whiskey, and heavy cream until smooth and pourable. Adjust consistency if needed.
  8. Before serving, drizzle whiskey glaze over chilled cheesecake. Slice with a sharp knife dipped in hot water for clean cuts and enjoy.
