A quick and easy molten chocolate lava cake recipe perfect for two, featuring a rich, gooey center and crisp edges. Ideal for intimate dessert moments or cozy evenings.

Ingredients

Scale
  • 4 oz (115 g) dark chocolate (bittersweet or semi-sweet)
  • 1/2 cup (115 g) unsalted butter, softened
  • 1/2 cup (100 g) granulated sugar
  • 2 large eggs, room temperature
  • 1/4 cup (30 g) all-purpose flour
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional: powdered sugar for dusting
  • Optional: fresh berries or whipped cream for serving

Instructions

  1. Preheat your oven to 425°F (220°C). Lightly butter two 6-ounce ramekins and dust the insides with cocoa powder to prevent sticking.
  2. Melt the chocolate and butter together using a double boiler or microwave in 20-second bursts, stirring in between until smooth and glossy.
  3. In a medium bowl, whisk the eggs and sugar vigorously until pale and slightly thickened, about 2-3 minutes.
  4. Stir the vanilla extract and a pinch of salt into the melted chocolate mixture, then gently fold this into the egg mixture in batches, careful not to deflate the batter.
  5. Sift the flour over the batter and gently fold it in until smooth and shiny with no flour streaks. Avoid overmixing.
  6. Divide the batter evenly between the prepared ramekins and place them on a baking sheet.
  7. Bake for 12-14 minutes until the edges are set and slightly puffed but the center remains soft and jiggly.
  8. Remove from the oven and let sit for one minute. Run a knife around the edges to loosen, then invert onto plates carefully.
  9. Dust with powdered sugar and serve immediately with fresh berries or whipped cream if desired.

Notes

Use quality dark chocolate with at least 60% cocoa for best flavor. Room temperature eggs help achieve smooth batter. Timing is crucial to maintain the molten center; start checking at 12 minutes. Butter and dust ramekins with cocoa powder to prevent sticking. Let cakes rest for one minute before unmolding for easier release. For gluten-free, substitute flour with almond flour or gluten-free baking mix. For dairy-free, use coconut oil and dairy-free chocolate.
