  • 4 cups cubed day-old bread (French or sourdough)
  • 1 ½ cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup cooked breakfast sausage or diced ham (optional)
  • ½ cup diced green onions
  • 1 teaspoon Dijon mustard
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Cut day-old bread into 1-inch cubes and spread evenly in the baking dish.
  3. Cook sausage or ham in a skillet over medium heat until browned and cooked through, about 5-7 minutes. Drain excess fat and spread over bread cubes. Skip this step if making vegetarian.
  4. In a large bowl, whisk together eggs, milk, Dijon mustard, garlic powder, salt, and pepper until smooth.
  5. Sprinkle shredded cheddar and mozzarella evenly over the bread and meat layer.
  6. Slowly pour the egg mixture over the layered casserole, pressing down gently to ensure bread absorbs the liquid evenly.
  7. Sprinkle diced green onions over the top.
  8. Bake for 40-45 minutes, or until the top is golden brown and a knife inserted in the center comes out clean.
  9. Let the casserole rest for 10 minutes before slicing.
