  • 1 (32 oz / 900 g) bag frozen tater tots
  • 1 lb (450 g) breakfast sausage, bulk or links (casings removed)
  • 8 large eggs, room temperature
  • 1 cup (240 ml) whole milk or half-and-half
  • 2 cups (200 g) shredded sharp cheddar cheese
  • 1/2 cup (50 g) shredded mozzarella cheese
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • Fresh parsley or chives, chopped (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 9×13-inch baking dish lightly with butter or non-stick spray to prevent sticking.
  2. Heat a large skillet over medium heat. Add the breakfast sausage and cook, breaking it up with a spatula, until browned and cooked through, about 7-8 minutes. Drain excess fat if needed.
  3. Add the chopped onion and minced garlic to the sausage in the skillet. Cook for another 3-4 minutes until onions are translucent and fragrant.
  4. While the sausage cooks, whisk together the 8 large eggs and 1 cup whole milk (or half-and-half) in a large bowl until smooth. Stir in smoked paprika, salt, and pepper.
  5. Spread the cooked sausage mixture evenly across the bottom of your greased baking dish. Sprinkle 1 cup of shredded cheddar cheese over the sausage.
  6. Arrange the frozen tater tots in a single layer over the cheese and sausage, covering the entire dish.
  7. Slowly pour the egg and milk mixture evenly over the tater tots. The eggs will fill in the spaces around the tots.
  8. Sprinkle the remaining 1 cup shredded cheddar and 1/2 cup mozzarella evenly over the top.
  9. Place the casserole in the preheated oven and bake for 45-50 minutes until the eggs are set and the top is golden and bubbly. Tent loosely with foil if cheese browns too quickly.
  10. Let the casserole sit for about 10 minutes after removing from the oven to help it set and make serving easier.
  11. Sprinkle chopped fresh parsley or chives on top before slicing and serving. Enjoy warm!

Do not thaw the tater tots to ensure they crisp up nicely. Cook sausage thoroughly and drain excess fat to avoid greasiness. Whisk eggs and milk well for a fluffy custard texture.
