  • 23 varieties of sparkling juice (e.g., peach sparkling juice, sparkling white grape juice, blood orange sparkling water)
  • 2 tablespoons fresh lemon or lime juice
  • 1/4 cup (60ml) simple syrup (optional)
  • Fresh mint and basil sprigs for garnish
  • Fruit garnishes such as thin peach slices, raspberries, or edible flowers
  • Optional: sparkling water or club soda to lighten drinks
  • Optional: splash of non-alcoholic peach schnapps
  • Optional: dollop of coconut cream or dairy-free yogurt for creamy texture

Instructions

  1. Place 4 cups (600g) of frozen peach slices in a blender.
  2. Add 2 tablespoons of fresh lemon or lime juice and 1/4 cup (60ml) of simple syrup if using.
  3. Blend on high until smooth and slushy, about 1–2 minutes. The mixture should be thick but pourable. Add a splash of sparkling juice or water if too thick.
  4. Chill the selected sparkling juices in the refrigerator until ice-cold.
  5. Set up the bar by arranging the blender pitcher with the frozen peach mixture, pitchers or bottles of sparkling juices, small bowls with fresh herbs, fruit garnishes, and cocktail picks.
  6. Prepare serving glasses, optionally rimming them with sugar by moistening edges with lemon juice and dipping into fine sugar.
  7. Guests pour about 1/2 cup (120ml) of peach slush into their glass, then top with 4–6 ounces (120–180ml) of sparkling juice. Stir gently with a long spoon.
  8. Garnish with a sprig of mint or basil and a slice of peach or berries before serving.

Notes

Use frozen peaches to avoid watering down the drink with ice. Chill sparkling juices and glasses for best fizz and refreshment. Blend peach mixture in batches if blender is less powerful. Add sparkling juice last and stir gently to preserve bubbles. Prepare peach base up to 2 days ahead and store frozen. Garnish with bruised mint leaves for enhanced aroma.
