  • 2 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup (227 g) unsalted butter, softened (Kerrygold recommended)
  • 1 ¾ cups (350 g) granulated sugar
  • 4 large eggs, room temperature
  • 1 cup (240 ml) buttermilk, room temperature (or plain yogurt as substitute)
  • 2 tsp pure vanilla extract
  • 2 tbsp matcha powder (ceremonial grade recommended)
  • 2 tbsp pink beetroot powder (or freeze-dried strawberry powder)
  • 8 oz (226 g) cream cheese, softened (Philadelphia recommended)
  • ½ cup (113 g) unsalted butter, softened
  • 4 cups (480 g) powdered sugar, sifted
  • 23 tbsp (3045 ml) heavy cream
  • 1 tsp pure vanilla extract
  • ½ tsp rose water (optional but recommended)
  • A few drops pink gel food coloring (optional)
  • Edible gold leaf (optional)
  • Fresh rose petals or small edible flowers (optional)
  • Chopped pistachios (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 8-inch round pans or line with parchment paper. Sift flour, baking powder, baking soda, and salt together.
  2. In a large bowl, cream softened butter and granulated sugar with an electric mixer on medium speed for 3-4 minutes until fluffy and pale.
  3. Beat in eggs one at a time, mixing well after each addition. Stir in vanilla extract until smooth.
  4. Alternately add sifted flour mixture and buttermilk to the creamed butter mixture, starting and ending with flour. Mix on low speed until just combined.
  5. Divide batter evenly into two bowls. Fold matcha powder into one bowl and beetroot powder into the other until colors are uniform.
  6. Pour each colored batter into prepared pans and smooth tops. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool cakes in pans for 10 minutes, then turn out onto cooling racks to cool completely.
  8. Beat cream cheese and softened butter until smooth. Gradually add powdered sugar, mixing well after each addition.
  9. Add vanilla extract, rose water, and heavy cream to achieve spreadable consistency. Mix in pink gel food coloring for pink frosting if desired.
  10. Place green cake layer on serving plate. Spread thick layer of frosting on top. Add pink layer and frost entire cake with remaining frosting.
  11. Decorate with edible flowers, gold leaf, or pistachios as desired. Chill cake for at least 30 minutes before serving to set frosting.

Notes

Sift dry ingredients thoroughly for a light texture. Use room temperature ingredients to avoid curdling. Chill frosting if too soft before applying. Bake layers simultaneously if possible to keep colors consistent. For vegan version, substitute butter and cream cheese with vegan alternatives and use flax eggs.
