A quick and easy grilled BBQ chicken paired with a fresh, sweet peach salsa that balances smoky, sweet, and spicy flavors for a perfect summer meal.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 6 oz / 170 g each)
  • 1/2 cup BBQ sauce (choose your favorite brand)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 3 ripe peaches, peeled and diced
  • 1/4 cup red bell pepper, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1 small jalapeño, seeded and minced
  • 2 tablespoons fresh cilantro, chopped
  • Juice of 1 lime
  • 1 tablespoon honey
  • Salt to taste

Instructions

  1. Pat the chicken breasts dry with paper towels.
  2. In a small bowl, mix together olive oil, BBQ sauce, smoked paprika, garlic powder, salt, and pepper.
  3. Coat each chicken breast evenly with the mixture and marinate for at least 15 minutes or up to 2 hours in the fridge.
  4. While the chicken marinates, combine diced peaches, red bell pepper, red onion, jalapeño, and cilantro in a medium bowl.
  5. Add lime juice, honey, and a pinch of salt to the salsa. Toss gently to combine and refrigerate until ready to serve.
  6. Preheat the grill to medium-high heat (about 400°F / 200°C) and lightly oil the grill grates.
  7. Place the chicken breasts on the grill and cook for about 6-7 minutes per side, flipping once.
  8. Use a meat thermometer to check for doneness; chicken should reach an internal temperature of 165°F (74°C).
  9. If the sauce starts to burn, move the chicken to a cooler part of the grill.
  10. Remove the chicken from the grill and let it rest for 5 minutes.
  11. Plate each chicken breast and spoon generous amounts of the sweet peach salsa on top before serving.

Notes

If peaches aren’t in season, swap with nectarines or mangoes. For spicier salsa, leave jalapeño seeds or add cayenne pepper. Use a grill pan or broiler if no grill is available. Keep a spray bottle of water handy to control flare-ups. Let chicken rest after grilling to keep it moist.
