  • 1 1/4 cups (160g) all-purpose flour (for cookie layer)

  • 1 cup (180g) mini mint chocolate chips (for cookie layer)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×9-inch baking pan or line it with parchment paper.
  2. Make the brownie batter: In a medium bowl, whisk together melted butter and granulated sugar until smooth. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  3. Sift together cocoa powder, flour, salt, and baking powder. Gradually fold into wet ingredients until just combined; do not overmix.
  4. Fold in half of the mini mint chocolate chips gently. Pour brownie batter evenly into prepared pan and spread out.
  5. Prepare the cookie dough: In a separate bowl, cream softened butter with brown and granulated sugars until light and fluffy. Beat in egg and vanilla extract.
  6. Whisk together flour, baking soda, and salt in another bowl. Gradually add to wet mixture, stirring until just combined. Fold in remaining mini mint chocolate chips.
  7. Dollop spoonfuls of cookie dough over brownie layer. Use spatula to gently spread and fill gaps, creating a marbled effect.
  8. Bake for 30-35 minutes or until cookie dough is golden and a toothpick inserted near center comes out with a few moist crumbs. Tent with foil if edges brown too fast.
  9. Let brookies cool completely on a wire rack before slicing into squares, about 1 hour.
