Instructions

  1. Activate the yeast: In a small bowl, combine warm milk (about 110°F/43°C) and 1 tablespoon sugar. Sprinkle yeast on top and let sit for 5-10 minutes until foamy.
  2. Mix the dough: In a large bowl or stand mixer, combine flour, remaining sugar, and salt. Add yeast mixture, eggs, softened butter, and vanilla extract. Mix on low speed until combined, then knead about 8 minutes until smooth and elastic.
  3. First rise: Place dough in a lightly greased bowl, cover, and let rise in a warm place until doubled in size, about 1 to 1.5 hours.
  4. Roll and cut donuts: Punch down dough and roll out on floured surface to ½ inch thickness. Cut donuts and holes using donut cutter. Place on parchment-lined baking sheets.
  5. Second rise: Cover donuts lightly and let rise until puffy, about 30-40 minutes.
