  • 3 medium fresh lemons, juiced (about ½ cup or 120 ml)
  • 23 tablespoons honey or agave syrup (adjust to taste)
  • 4 cups (1 liter) filtered water, divided
  • Ice cubes (optional, for serving)
  • Optional garnish: fresh mint leaves or lemon slices

Instructions

  1. Bring 2 cups (480 ml) of filtered water to a gentle boil. Remove from heat and add 1 tablespoon of dried butterfly pea flowers. Let steep for 5-7 minutes until the water turns a deep blue.
  2. Pour the steeped tea through a fine mesh strainer into a heatproof pitcher to remove the flower petals, yielding about 1½ cups (360 ml) of blue tea.
  3. While the tea is still warm, stir in 2-3 tablespoons of honey or preferred sweetener until fully dissolved.
  4. Once the tea reaches room temperature, add ½ cup (120 ml) freshly squeezed lemon juice and the remaining 2 cups (480 ml) of cold water to the pitcher. Stir gently and watch the color change from blue to purple.
  5. Serve over ice cubes and garnish with lemon slices or fresh mint if desired.
