A refreshing and hydrating drink combining crisp cucumber and zesty lime with a hint of sweetness, perfect for warm weather and easy to make in under 10 minutes.

Ingredients

Scale
  • 2 medium English cucumbers (peeled if preferred)
  • 3 large fresh limes, juiced (about 3 tablespoons / 45 ml)
  • 4 cups (1 liter) cold filtered water
  • 23 tablespoons sweetener (simple syrup, agave nectar, or honey)
  • A small handful of fresh mint leaves (optional)
  • Ice cubes for serving

Instructions

  1. Wash and prepare cucumbers: rinse well, peel if preferred, and cut into 1–2 inch chunks.
  2. Blend cucumber chunks with 1 cup (240 ml) cold water on high until smooth and creamy.
  3. Strain the blended mixture through a fine mesh strainer or cheesecloth into a large bowl or pitcher, pressing to extract juice.
  4. Stir in freshly squeezed lime juice and 2-3 tablespoons of sweetener, adjusting sweetness to taste.
  5. Add remaining 3 cups (720 ml) cold water and stir well to combine.
  6. Optionally, add torn or bruised fresh mint leaves and let steep for 10-15 minutes for stronger flavor.
  7. Refrigerate for at least 30 minutes to chill and allow flavors to meld.
  8. Serve over plenty of ice cubes, garnished with lime wheels or mint if desired.

Notes

For a smoother drink, strain the cucumber puree well. Avoid bitterness by not pressing cucumber seeds too hard. Use fresh lime juice for best flavor. Adjust sweetness gradually. Let the drink chill for at least 30 minutes before serving. Optional mint adds herbal freshness. A pinch of salt can mellow lime sharpness if needed.
