  • 1 pint (450g) fresh strawberries, washed and dried thoroughly
  • 1 cup (240ml) plain Greek yogurt, full-fat or 2%
  • 12 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Gently rinse 1 pint (450g) of fresh strawberries and pat them completely dry with paper towels. Remove the green stems if you prefer bite-sized pieces.
  2. In a mixing bowl, combine 1 cup (240ml) of plain Greek yogurt with 1-2 tablespoons of honey or maple syrup and 1 teaspoon of vanilla extract. Add 1 teaspoon of freshly grated lemon zest if using. Whisk until smooth and well blended.
  3. Using a toothpick or fork, carefully dip each strawberry into the yogurt mixture, turning to coat evenly. Allow any excess yogurt to drip off before placing the berry on a lined baking sheet. Space them out so they don’t stick together as they freeze.
  4. Place the tray in the freezer and freeze for at least 2 hours, or until the yogurt coating is firm and completely frozen.
  5. Once frozen, transfer the strawberry bites into an airtight container or freezer bag. Store in the freezer for up to 2 weeks. Let sit at room temperature for 3-5 minutes before eating to soften slightly.

Notes

Dry strawberries thoroughly to ensure yogurt coating sticks well. Use full-fat Greek yogurt for creamier texture. Adjust sweetness to taste. Freeze on a flat tray to prevent sticking. Let bites soften slightly before eating for easier biting. Optional: dip in melted chocolate after freezing for a layered treat.
