A refreshing and easy-to-make summer mocktail combining fresh strawberries, basil, lemon juice, honey or agave syrup, and sparkling water for a light, bubbly drink perfect for warm days.

Ingredients

Scale
  • 1 cup fresh strawberries, hulled and quartered
  • 810 fresh basil leaves, plus extra for garnish
  • 2 tablespoons fresh lemon juice
  • 12 tablespoons honey or agave syrup
  • 1 cup cold sparkling water
  • Ice cubes

Instructions

  1. Rinse and hull about 1 cup (150g) of fresh strawberries. Cut them into quarters.
  2. Place the quartered strawberries and 8-10 fresh basil leaves into a mixing glass or pitcher. Gently muddle using a muddler or the back of a wooden spoon to release juices and aromatic oils without shredding the basil.
  3. Add 1-2 tablespoons of honey or agave syrup and 2 tablespoons (30ml) of fresh lemon juice. Stir well to combine and dissolve the sweetener. Adjust sweetness to taste.
  4. Fill a highball or Collins glass with ice cubes.
  5. Slowly pour about 1 cup (240ml) of cold sparkling water over the muddled mixture or into the glass if serving separately. Stir gently to mix without losing carbonation.
  6. Garnish with a sprig of fresh basil and a sliced strawberry. Serve immediately.

Notes

For a smoother texture, strain the muddled mixture before adding sparkling water. Chill glasses and sparkling water beforehand to keep the drink fizzy longer. Adjust sweetness last to balance flavors. Avoid over-muddling basil to prevent bitterness. Serve immediately to enjoy the bubbles at their peak.
