A light, refreshing, and visually stunning summer treat featuring thick watermelon slices topped with a yogurt drizzle and colorful fresh fruits. Perfect for quick, no-bake summer gatherings.

Ingredients

Scale
  • 1 large seedless watermelon, sliced into 1-inch thick rounds
  • 1 cup (240 ml) Greek yogurt, plain or vanilla-flavored (or dairy-free coconut yogurt for vegan option)
  • 2 tablespoons (30 ml) honey or maple syrup
  • 1 cup (150 g) strawberries, hulled and sliced
  • 1/2 cup (75 g) blueberries
  • 1 large or 2 small kiwis, peeled and sliced
  • 1/2 cup (120 ml) mandarin orange segments or small orange slices
  • A handful of fresh mint leaves for garnish
  • Optional extras:
  • 1/4 cup (30 g) chopped pistachios or toasted coconut flakes
  • Fresh lime juice (to taste)
  • Chia seeds or hemp hearts (for texture and nutrition)

Instructions

  1. Rinse the watermelon and pat dry. Slice into 1-inch (2.5 cm) thick rounds using a sharp knife. Cut each round into 6-8 wedges like pizza slices (about 5 minutes).
  2. In a small bowl, combine 1 cup (240 ml) Greek yogurt with 2 tablespoons (30 ml) honey or maple syrup. Whisk until smooth and slightly runny but not watery. Optionally add a teaspoon of fresh lime juice (about 3 minutes).
  3. Wash and dry all fresh fruits. Hull and slice strawberries, peel and slice kiwis, segment mandarins, and rinse blueberries. Arrange them on a plate for easy access (7-10 minutes).
  4. Lay out the watermelon wedges on a serving platter. Spoon or drizzle the sweetened yogurt over each slice, spreading lightly but leaving some watermelon visible for color contrast.
  5. Scatter the mixed fruit toppings artfully over the yogurt. Balance colors and sizes for visual appeal. Garnish with fresh mint leaves and optional nuts or coconut flakes for crunch.
  6. Optionally squeeze fresh lime juice on top and sprinkle with lime zest or chia seeds. Serve immediately or chill for up to 30 minutes to let flavors meld slightly. Avoid longer refrigeration to keep watermelon crisp.

Notes

Use a thick 1-inch watermelon slice to prevent sogginess. Keep yogurt and fruit chilled before assembly. Avoid overloading toppings to keep slices easy to hold. Prepare fruit toppings last minute for freshness. Optional lime juice and zest add brightness. Store leftovers covered in fridge up to 24 hours but expect some softening.
