Instructions

  1. Separate the eggs: Crack 4 large eggs carefully, placing the whites in a clean bowl and yolks in another. Use room temperature eggs for best results. (5 minutes)
  2. Whisk the egg whites: Using a hand whisk or electric mixer, beat the egg whites with a pinch of salt until soft peaks form. Do not overbeat. (3-4 minutes)
  3. Fold in the yolks and milk: Gently fold the egg yolks and 2 tablespoons of milk or cream into the fluffy whites using a spatula, keeping the mixture airy. (2 minutes)
  4. Heat the pan: Place a non-stick frying pan over medium-low heat and add 1 tablespoon of unsalted butter. Let it melt slowly without browning. (2 minutes)
  5. Place the heart mold rings: Grease the inside of heart-shaped molds with butter, place them in the pan, and pour the egg mixture evenly into each mold, filling about three-quarters full. (2 minutes)
