Perfect Honey Glazed Ham Recipe with Easy Brown Sugar Pineapple Crust

A deliciously sticky and sweet honey glazed ham with a caramelized brown sugar pineapple crust, perfect for holidays and family dinners. This recipe balances sweet, tangy, and savory flavors with a simple glaze that caramelizes beautifully.

Ingredients

  • Bone-in fully cooked ham, 8-10 pounds (3.6-4.5 kg), spiral sliced
  • Honey, ½ cup (120 ml)
  • Brown sugar, 1 cup (200 g), packed
  • Pineapple rings, 8-10 rings, canned in juice
  • Dijon mustard, 2 tablespoons (30 ml)
  • Ground cloves, 1 teaspoon (2 g)
  • Ground cinnamon, ½ teaspoon (1 g), optional
  • Butter, 2 tablespoons (28 g), melted
  • Maraschino cherries, 8-10, for garnish (optional)

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Remove the ham from its packaging and pat dry. Score the fat in a diamond pattern about ½ inch (1.25 cm) apart if there is a thick layer of fat.
  3. Place the ham cut-side down in a roasting pan.
  4. In a mixing bowl, whisk together honey, brown sugar, Dijon mustard, melted butter, ground cloves, and cinnamon until smooth. Stir in about ¼ cup (60 ml) of pineapple juice from the can.
  5. Brush the glaze generously over the ham, making sure to get into the scored sections.
  6. Arrange pineapple rings on top of the ham, securing each with a toothpick.
  7. Cover the ham loosely with aluminum foil and bake for 1½ to 2 hours, basting with more glaze every 20-30 minutes. The ham is warmed through when it reaches 140°F (60°C) internal temperature.
  8. During the last 20 minutes, remove the foil to allow the glaze and pineapple to caramelize. Watch closely to avoid burning.
  9. Optionally, place maraschino cherries in the center of each pineapple ring for garnish.
  10. Remove the ham from the oven and let it rest for 10-15 minutes before slicing.

Notes

Do not skip the resting time after baking to keep the ham juicy. Baste frequently every 20-30 minutes to build a sticky, caramelized crust. If glaze thickens too much, whisk in a splash of pineapple juice to loosen it. Watch carefully during the last 20 minutes to avoid burning the glaze. Warm glaze slightly before applying for better spreading.
