  • 1 cup honey (raw or wildflower honey preferred)
  • 1 cup packed brown sugar (light or dark)
  • 1/4 cup Dijon mustard
  • 1/4 cup apple cider vinegar
  • 1 can pineapple slices (about 810 slices, drained, reserve juice for glaze)
  • Whole cloves (optional, about 15-20)
  • 2 tablespoons butter, melted (or coconut oil/olive oil for dairy-free)
  • Pinch of ground cinnamon (optional)
  • Pinch of ground nutmeg (optional)

Instructions

  1. Preheat oven to 325°F (165°C). Remove spiral ham from packaging and place on a roasting pan with a rack.
  2. Score the ham surface lightly with shallow diagonal cuts about 1/2 inch apart. Stud with whole cloves if desired.
  3. Brush the ham all over with 2 tablespoons melted butter.
  4. Arrange pineapple slices over the top of the ham, securing with toothpicks if needed.
  5. In a small saucepan, combine honey, brown sugar, Dijon mustard, apple cider vinegar, reserved pineapple juice, cinnamon, and nutmeg. Warm over medium heat, stirring occasionally until sugar dissolves and glaze thickens slightly (5-7 minutes).
  6. Baste the ham generously with the glaze using a basting brush. Reserve some glaze for later.
  7. Cover the ham loosely with aluminum foil.
  8. Bake for about 1 hour and 15 minutes, basting with additional glaze every 20 minutes.
  9. Remove foil during the last 15 minutes to allow glaze to caramelize and become sticky and golden brown.
  10. Check internal temperature with a meat thermometer; ham should reach 140°F (60°C).
  11. Let ham rest for 10-15 minutes before slicing to allow juices to redistribute.
  12. Carve and serve with extra glaze on the side if desired.

Keep oven temperature moderate at 325°F to prevent glaze burning. Baste regularly and tent with foil if glaze darkens too quickly. Let ham rest after cooking for juicy slices. For dairy-free, substitute butter with coconut or olive oil. Fresh pineapple can be used instead of canned but watch moisture and cooking time.
