Perfect Maple Glazed Ham

A cozy and easy celebration dinner idea featuring a tender, juicy ham with a sticky, sweet maple glaze balanced with Dijon mustard and brown sugar.

  • 1 fully cooked bone-in ham (about 78 pounds / 3.23.6 kg), spiral-cut preferred
  • 1 cup pure maple syrup (Grade A recommended)
  • 1/4 cup brown sugar, packed
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon ground cinnamon (optional)
  • Pinch of ground cloves or nutmeg (optional)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Remove any packaging and place the ham on a rack in your roasting pan, fat-side up.
  3. Score the surface of the ham in a diamond pattern about 1/4 inch deep.
  4. In a small saucepan, combine maple syrup, brown sugar, Dijon mustard, apple cider vinegar, cinnamon, and cloves. Warm over medium heat, stirring until sugar dissolves and mixture is smooth, about 3-5 minutes. Remove from heat.
  5. Brush about half of the glaze over the scored surface of the ham, getting into the crevices. Reserve the rest for later.
  6. Place the roasting pan in the oven and roast for about 1 hour and 30 minutes (about 10-12 minutes per pound), basting every 20 minutes with the remaining glaze. Tent with foil if the ham browns too quickly.
  7. Use a meat thermometer inserted into the thickest part of the ham without touching bone. The internal temperature should reach 140°F (60°C).
  8. Remove from oven and let rest, tented loosely with foil, for 15-20 minutes before slicing.
  9. Slice against the grain into even pieces and serve.

Notes

Score the fat to help the glaze penetrate and create a caramelized crust. Baste every 20 minutes to keep glaze fresh and sticky. Tent with foil if browning too fast. Rest ham before carving to lock in juices. Save pan drippings for a quick sauce by simmering with apple cider vinegar.
