Ingredients

  • All-purpose flour (2 cups / 250 g)
  • Unsalted butter, cold and cubed (1/2 cup / 115 g)
  • Sharp cheddar cheese, shredded (1 cup / 100 g)
  • Cold water (4-6 tablespoons / 60-90 ml)
  • Salt (1/2 teaspoon)
  • Smoked paprika (1/4 teaspoon, optional)
  • Assorted cheeses: sharp cheddar, creamy brie, and tangy blue cheese (6-8 ounces / 170-225 g total)
  • Cured meats: spicy soppressata, honey-glazed ham, and classic smoked salami (6-8 ounces / 170-225 g total)
  • Fresh berries: strawberries, blueberries, and raspberries (1 cup each / approx. 150 g each)
  • Red grapes, washed and halved (1 cup / 150 g)
  • Mixed nuts: roasted almonds and cashews (1/2 cup / 60 g)
  • Honey or fig jam (2-3 tablespoons / 30-45 ml)
  • Fresh rosemary sprigs (for garnish)
  • Olives: Kalamata or Castelvetrano (1/2 cup / 75 g)

Instructions

  1. In a large bowl, combine 2 cups (250 g) all-purpose flour with 1/2 teaspoon salt and 1/4 teaspoon smoked paprika.
  2. Add cold, cubed unsalted butter (1/2 cup / 115 g) and mix with a pastry cutter or fingers until mixture resembles coarse crumbs.
  3. Stir in 1 cup (100 g) shredded sharp cheddar cheese until evenly distributed.
  4. Gradually add 4-6 tablespoons (60-90 ml) cold water, mixing gently until dough comes together. Wrap in plastic and refrigerate at least 30 minutes.
  5. Preheat oven to 350°F (175°C). Line baking sheet with parchment paper.
  6. Roll chilled dough on lightly floured surface to 1/8-inch (3 mm) thickness. Cut out star shapes with cookie cutter and place on baking sheet.
  7. Bake crackers for 12-15 minutes until golden around edges. Cool completely on wire rack.
  8. While crackers bake, slice cheeses and meats into bite-sized pieces. Rinse and dry berries and grapes. Arrange nuts and olives in small bowls.
  9. On a large wooden board or platter, arrange cheeses, meats, berries, grapes, nuts, and olives with space between items.
  10. Scatter star crackers around the board. Add small bowls of honey or fig jam and tuck in fresh rosemary sprigs.
  11. Balance color and texture with a final check. Keep refrigerated until serving, then bring to room temperature about 30 minutes before guests arrive.

Notes

If dough is too sticky, chill longer or lightly flour surface. Avoid overcrowding baking sheet to ensure crackers crisp properly. Store crackers separately in airtight container to keep crisp.
