  • Flour or corn tortillas, warmed
  • Fresh cilantro (optional, for garnish)

Instructions

  1. Thinly slice chicken breasts, bell peppers, and onion. Have olive oil ready.
  2. In a bowl, toss chicken strips with garlic powder, chili powder, cumin, smoked paprika, salt, and black pepper until evenly coated.
  3. Preheat Blackstone griddle to medium-high heat (about 375°F). Add 1 tablespoon olive oil and spread evenly.
  4. Place chicken strips in a single layer on the griddle. Sear undisturbed for 3-4 minutes, then flip and cook another 3-4 minutes until internal temperature reaches 165°F. Remove chicken and set aside.
  5. Add remaining tablespoon olive oil to griddle. Add sliced peppers and onions, season with a pinch of salt and pepper. Stir frequently until veggies are tender but still slightly crunchy with some charred spots (5-6 minutes).
  6. Return chicken to griddle with veggies. Stir and cook together for 1-2 minutes to combine flavors. Remove from heat and squeeze fresh lime juice over the mixture.
  7. Warm tortillas on the griddle or in a dry skillet until pliable and slightly toasted (about 3 minutes).
  8. Serve chicken and veggies piled onto warm tortillas, garnish with fresh cilantro if desired, and enjoy immediately.

Do not overcrowd the griddle; cook in batches if necessary to get a good sear. Thin slicing is key for quick cooking and tender texture. Use fresh lime juice at the end to brighten flavors. For gluten-free, use corn tortillas or lettuce wraps. Chicken thighs can be substituted for extra juiciness. If no Blackstone griddle is available, a large cast iron skillet works as an alternative.
