A quick and easy Peach Bellini cocktail made with fresh peaches, prosecco, and a splash of lemon juice, perfect for brunch or celebrations.

  • 2 large ripe peaches, peeled and pitted
  • 1 bottle (750 ml) prosecco or sparkling wine, chilled
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon simple syrup (optional)
  • A handful of ice cubes
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Prepare the peaches by blanching them in boiling water for 30 seconds, then plunge into ice water to easily peel off the skins. Pit and cut into chunks.
  2. Place peach chunks into a blender. Add fresh lemon juice and simple syrup if using. Blend on high until smooth but not watery, about 30 seconds. Optionally strain through a fine mesh strainer for a silky texture.
  3. Chill the peach puree in the fridge for 10-15 minutes or blend with a few ice cubes to cool it down.
  4. Fill each chilled champagne flute about one-third full with the peach puree. Slowly top with prosecco, pouring gently down the side of the glass to preserve bubbles. Stir lightly to combine.
  5. Garnish with a fresh mint sprig or a thin peach slice on the rim and serve immediately.

Notes

Use ripe but firm peaches for best flavor. Chill all ingredients to keep bubbles lively. Do not blend prosecco to avoid flattening. Adjust simple syrup to taste depending on peach sweetness. Prepare puree ahead but add prosecco just before serving.
