A bright and elegant cocktail combining fresh raspberries, floral rose syrup, and sparkling Prosecco for a refreshing and sophisticated sip perfect for any occasion.

Ingredients

Scale
  • 1 bottle (750 ml) chilled dry or extra dry Prosecco
  • 1 cup (about 125 grams) fresh raspberries, washed
  • 2 tablespoons rose syrup (adjust to taste)
  • 1 tablespoon fresh lemon juice (about half a lemon)
  • Ice cubes (optional)
  • A few sprigs of fresh mint leaves for garnish (optional)

Instructions

  1. Chill your Prosecco and raspberries in the refrigerator for 1–2 hours.
  2. Chill your glasses in the freezer for 15 minutes if desired.
  3. In a small pitcher or mixing glass, combine 2 tablespoons of rose syrup with 1 tablespoon of freshly squeezed lemon juice and stir gently.
  4. Drop 3–4 fresh raspberries into each glass. Optionally muddle lightly with the back of a spoon.
  5. Divide the rose syrup and lemon juice mixture evenly among the glasses, about 1 to 1.5 tablespoons per glass.
  6. Slowly pour about 4–5 ounces (120–150 ml) of chilled Prosecco over the syrup and raspberries in each glass, pouring gently down the side to preserve bubbles.
  7. Garnish each glass with a sprig of fresh mint and serve immediately.

Notes

Keep all ingredients and glasses well chilled to preserve the Prosecco’s bubbles. Pour Prosecco slowly to avoid flattening the fizz. Adjust rose syrup sweetness to taste. For a dairy-free and vegan option, this cocktail is naturally suited. Use fresh lemon juice for best flavor. You can prepare the syrup and lemon juice mixture up to 3 days ahead but add Prosecco just before serving.
