  • 45 medium fresh strawberries, hulled and sliced
  • 2 ounces (60 ml) gin (London dry gin recommended)
  • 1 ounce (30 ml) fresh lemon juice
  • ½ ounce (15 ml) simple syrup
  • 45 ounces (120150 ml) chilled champagne or sparkling wine (brut or extra dry)
  • Ice cubes
  • Fresh strawberry and lemon twist for garnish (optional)

Instructions

  1. Place the hulled and sliced strawberries in a cocktail shaker and muddle firmly for about 30 seconds until juicy but not pulpy.
  2. Add 2 ounces gin, 1 ounce fresh lemon juice, and ½ ounce simple syrup to the shaker.
  3. Fill the shaker with ice cubes, secure the lid, and shake vigorously for about 15 seconds until well chilled.
  4. Strain the mixture through a fine mesh strainer into a champagne flute to remove seeds and pulp.
  5. Slowly pour 4-5 ounces chilled champagne or sparkling wine into the glass to preserve bubbles.
  6. Garnish with a fresh strawberry on the rim and a twist of lemon peel, then serve immediately.

Notes

Muddle strawberries just enough to release juice without pulverizing to avoid a cloudy cocktail. Use fresh lemon juice for best flavor. Pour champagne slowly over the back of a spoon to preserve bubbles. Chill ingredients beforehand for a crisp finish. Can substitute prosecco or cava for champagne. For a lower-alcohol version, replace half the gin with sparkling water.
