  • 2 ½ cups (315g) all-purpose flour
  • 1 teaspoon granulated sugar
  • 1 teaspoon salt
  • 1 cup (226g) unsalted butter, cold and cubed
  • ¼ cup (60ml) ice water, plus extra if needed
  • 1 teaspoon apple cider vinegar
  • 2 cups mixed berries (fresh or frozen; blueberries, raspberries, strawberries)
  • ⅓ cup (65g) granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • ½ teaspoon vanilla extract
  • 1 large egg, beaten (for egg wash)
  • 1 tablespoon coarse sugar (like turbinado) for sprinkling

Instructions

  1. In a large bowl, whisk together 2 ½ cups flour, sugar, and salt. Add the cold, cubed butter. Using a pastry cutter or food processor pulse the butter into the flour until the mixture resembles coarse crumbs with pea-sized bits of butter remaining.
  2. Mix the apple cider vinegar with ¼ cup ice water. Slowly pour into the flour mixture, stirring gently with a fork until the dough just starts to come together. Add more water, 1 tablespoon at a time, if the dough feels too dry.
  3. Shape the dough into a flat disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  4. In a medium bowl, gently toss the mixed berries with sugar, cornstarch, lemon zest, lemon juice, and vanilla extract. Set aside.
  5. On a lightly floured surface, roll the chilled dough into a roughly 12-inch circle. Use a heart-shaped template or freehand cut a large heart shape. Transfer carefully to a parchment-lined baking sheet.
  6. Spoon the berry mixture into the center, leaving a 2-inch border all around. Fold the edges of the dough up and over the filling, pleating as you go to form the rustic edge.
  7. Brush the crust with beaten egg and sprinkle coarse sugar on top.
  8. Bake in a preheated 400°F (200°C) oven for 35-40 minutes, until the crust is golden and the filling is bubbling. If the edges brown too fast, loosely tent with foil halfway through.
  9. Let the galette cool for at least 15 minutes before slicing.

Notes

Keep butter cold and handle dough minimally for flakiness. Chill dough before rolling. Toss berries with cornstarch to prevent watery filling. Tent edges with foil if browning too fast. Brush crust twice with egg wash for extra crispness if desired.
