A cozy and easy slow cooker pot roast recipe featuring tender beef chuck roast with carrots, potatoes, and savory herbs, perfect for comforting dinners and family gatherings.

Ingredients

  • 3 to 4 pounds beef chuck roast, well-marbled
  • 4 large carrots, peeled and cut into chunks
  • 3 medium russet potatoes, peeled and quartered
  • 1 large yellow onion, sliced
  • 4 garlic cloves, minced
  • 2 cups low sodium beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 3 sprigs fresh thyme or 1 teaspoon dried thyme
  • 2 sprigs fresh rosemary or 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Optional: 1 cup red wine for deglazing

Instructions

  1. Peel and cut the carrots into large chunks, quarter the potatoes, slice the onion, and mince the garlic. Set aside.
  2. Pat the beef chuck roast dry with paper towels. Generously season all sides with salt and pepper.
  3. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Brown the roast on all sides, about 3 to 4 minutes per side. (Optional but recommended)
  4. If using red wine, pour it into the hot skillet to deglaze, scraping up browned bits. Let reduce for about 2 minutes. Add beef broth and tomato paste, stirring to combine.
  5. Place carrots, potatoes, and onions at the bottom of the slow cooker. Lay the browned roast on top of the vegetables. Pour the broth mixture over everything.
  6. Tuck thyme and rosemary sprigs around the roast and sprinkle minced garlic on top.
  7. Cover and cook on low for 8 to 10 hours or on high for 4 to 5 hours until the roast is fork-tender and vegetables are soft but not mushy.
  8. Remove herbs before serving. If sauce is too thin, transfer liquid to a saucepan and simmer until thickened or stir in a cornstarch slurry (1 tbsp cornstarch + 1 tbsp cold water) and cook until thickened.

Notes

Browning the beef before slow cooking adds depth of flavor but is optional. Use kosher salt for better seasoning. If sauce is thin, simmer or thicken with cornstarch slurry. Add vegetables halfway through cooking if they become too soft. Recipe is naturally gluten-free; verify Worcestershire sauce if strict gluten-free is needed.
