  • 1 ½ teaspoons salt
  • 2 large eggs, room temperature
  • 1 tablespoon honey (optional)

Instructions

  1. Activate the yeast (10 minutes): In a large mixing bowl, combine warm milk (about 110°F/43°C), sugar, and active dry yeast. Stir gently and let sit until foamy and bubbly.
  2. Mix the dough (5 minutes): Add melted butter, honey, eggs, and salt to the yeast mixture. Gradually add flour, one cup at a time, stirring with a wooden spoon or stand mixer with dough hook on low speed until dough starts coming together but is slightly sticky.
  3. Knead the dough (8-10 minutes): Turn dough onto a lightly floured surface and knead until smooth and elastic. If using a stand mixer, knead on medium speed. Dough should spring back when pressed lightly.
  4. First rise (1 hour): Place dough in a lightly greased bowl, cover with damp towel or plastic wrap, and let rise in a warm, draft-free spot until doubled in size.
  5. Shape the rolls (10 minutes): Punch down dough gently to release air. Divide into 12 equal portions (~60 grams each). Shape each into a smooth ball by tucking edges underneath. Place evenly spaced on greased baking sheet or round cake pan.
  6. Second rise (30-40 minutes): Cover rolls loosely and let rise again until puffy and nearly doubled.
  7. Bake (18-22 minutes): Preheat oven to 375°F (190°C). Bake rolls until golden brown and a skewer inserted comes out clean.
  8. Finish with butter (5 minutes): Brush warm rolls with melted butter immediately after removing from oven.

Notes

Use warm milk at about 110°F to activate yeast properly. Knead just enough to develop gluten but keep dough tender. Do not skip the second rise for best texture. Brush rolls with butter right after baking for a soft crust. Tent with foil if rolls brown too quickly.
