  • 2 cups (240 g) all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup (113 g) unsalted butter, softened
  • ¾ cup (150 g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ¾ cup (180 ml) buttermilk, room temperature
  • 1 cup (150 g) fresh strawberries, diced small
  • ½ cup (160 g) strawberry jam

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat the softened butter and granulated sugar with a hand or stand mixer on medium speed until light and fluffy, about 3 minutes.
  4. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Mix in the vanilla extract.
  5. Add the dry ingredients in three parts, alternating with the buttermilk, starting and ending with the dry ingredients. Mix gently until just combined.
  6. Fold in the diced strawberries gently with a rubber spatula, being careful not to break them up too much.
  7. Pour half of the batter into the prepared loaf pan. Spoon half of the strawberry jam over the batter in dollops. Using a knife or skewer, gently swirl the jam through the batter.
  8. Add the remaining batter on top and repeat with the remaining jam and swirling.
  9. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs. The top should be golden and spring back lightly when pressed.
  10. Let the bread cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
  11. Slice with a serrated knife and serve plain or with butter.

Notes

Do not overmix the batter to avoid a dense bread. Use room temperature ingredients for best results. Swirl the jam gently to create pretty ribbons without blending it fully into the batter. Let the bread cool completely before slicing to prevent gummy texture. If jam sinks, thicken it with cornstarch before swirling.
