  • 1 cup (150g) macadamia nuts, roughly chopped and toasted

Instructions

  1. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. Toast the macadamia nuts by spreading them in a single layer on a small baking tray and baking for 5-7 minutes until fragrant and lightly golden. Let cool.
  3. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  4. In a large bowl, beat the softened butter with the brown sugar and granulated sugar using an electric mixer on medium speed until light and fluffy, about 3-4 minutes.
  5. Beat in the eggs one at a time, then stir in the vanilla extract.
